A tea-based beverage called bubble tea, often known as boba tea, was invented in Taiwan in the 1980s. In a sealed plastic cup with an extra-long straw, it is typically served with sweetened milk and chewy tapioca balls. I grew up drinking boba tea and always thought it was strange that I had to chew while I drank.

Who created Bubble Teais a subject of controversy. According to one rumor, the proprietor of the Chun Shui Tang tea room, a tea shop in Taichung, central Taiwan, claimed he received the inspiration to serve cold tea after observing cold coffee being served in Japan. When his product development manager added some prepared tapioca balls to her beverage at a staff meeting, the first Bubble Tea was created.

Tapioca balls come in a variety of sizes. The larger, dark-colored ones are referred to as boba, and the smaller, amber- or white-colored ones are referred to as pearls. Depending on who you ask and where they're from, the names are now interchangeable. In Taiwan, there is a north and south issue. It can be a west coast vs. east coast issue in the US.
